This lovely white Menetou-Salon Loire wine is 100 percent Sauvignon Blanc from winery owners Isabelle and Pierre Clément at Domaine DeChatenoy and is made with 20 to 24-year-old grapes. We liked its aromatic character and citrus and herbaceous notes very much. The winery is southwest of Sancerre.
The grapes are partially pressed pneumatically followed by cold stabilization and indigenous yeasts for “spontaneous fermentation.” The wine matures on fine lees. The winery produces 28,000 bottles a year. It’s enjoyable on its own or served with chicken or fish dishes.
